Learn about authentic Italian dishes using meat and fish. Try your hand at making fresh pasta and ravioli filled with seasonal ingredients. Discover the secrets of deeply rich sauces to enhance any dinner. Glean inspiration for an Italian extravaganza. Most of the recipes can be done ahead and are a good mixture of simple and challenging. Recipes might include home made ciabatta bread, ravioli with braised chicken and red pepper butter sauce, beef carpaccio, parmigiana di melanzane and cassata di pulmone (3 layered cake, Carmel, nut & chocolate terrine).
