Potato & rosemary tartlets
Serves 6
Ingredients
1 packet of ready rolled puff pastry
6 medium potatoes
Olive oil
Salt & Pepper
Rosemary
Method
- Slice all of the potatoes with a mandolin or using a very sharp
knife.
- Rinse the potato slices well to remove the starch and then dry
as much as possible.
- Cut 6 even circles out of the pastry and arrange the potatoes
slices clockwise in a circle on the pastry, leaving a narrow rim
around the edge.
- Drizzle with olive oil and season with salt and pepper.
- Sprinkle with rosemary leaves. Place on a baking sheet.
- Cook for 15-20 minutes or untill lightly golden in a preheated
oven, 180C/350F/Gas 4.
Eat hot or cold with rocket mayonnaise and grilled vegetables. |
